Abstract
Oral diseases are the most prevalent diseases of mankind and have a substantial economic and social burden. Consumption of dairy products has been associated with a decreased risk of developing oral diseases and this has been attributed to sequences in the major milk protein casein, the casein phosphopeptides (CPP) that act as a saliva biomimetic to stabilize amorphous calcium phosphate (ACP). The CPP form nanocomplexes with ACP to help stabilize the ions and deliver them to the tooth surface.
