Abstract

New and emerging digital technologies have been implemented in sensory science, which minimize subjectivity and biases in data acquisition and interpretation compared to traditional methods. These technologies have enabled the incorporation of physiological and emotional responses of panelists elicited by food, beverage, and packaging stimuli through accurate and unbiased information from different sensor technologies.
