Dr Ken Ng is a Senior Lecturer in Food Chemistry and Course Coordinator of the Master of Food Science in the School of Agriculture & Food, Faculty of Veterinary & Agricultural Sciences. He teaches and coordinates the Master subject FOOD90022 Food Chemistry, and the undergraduate subjects FOOD20003 Food Chemistry, Biology & Nutrition and FOOD30010 Functional Foods.

He has a PhD in biochemistry and a Postgraduate Certificate in University teaching.

He conducts research on the chemistry and biochemistry of plant antioxidants and on the anti-cancer properties of organic Se. He has also conducted research on formulation approaches to pharmaceutical delivery of chemically labile antioxidants, biosynthesis of lipophosphoglycan from the human protozoan parasite Leishmania, biosynthesis of plant beta(1-3)glucan and biosynthesis of hyaluronic acid.

PROFESSIONAL HISTORY: 2010-Present: Faculty of Veterinary & Agricultural Sciences, University of Melbourne (research on plant antioxidant chemistry and biochemistry). 2006-09: Lecturer in Pharmaceutical Science and 2001-05: Assistant lecturer in Pharmaceutical Science, Faculty of Pharmacy & Pharmaceutical Sciences, Monash University (research on antioxidant chemistry and formulation approaches to pharmaceutical delivery of chemically labile antioxidants). 1995-99: ARC Research Fellow and 1993-94: Research Fellow, Plant Cell Biology Research Centre, School of Botany, University of Melbourne and the Walter & Eliza Hall Institute of Medical Research (research on the biosynthesis of lipophosphoglycan from the human protozoan parasite, Leishmania). 1989-93: Research Fellow, School of Biochemistry, La Trobe University (research on the biosynthesis of plant beta(1-3)glucan). 1986-89: Postdoctoral Research Fellow, Department of Pediatrics & Biochemistry, University of Chicago, Chicago, Illinois, USA (research on the biosynthesis of hyaluronic acid).
